If there is one, just ONE vegetable I can't turn down, it's a glazed carrot. Let's face it, it may not be the best vegetable for you, but it's loaded with goodness, and it's gotta be better than eating fried potatoes, right?? They're ultra-comforting, and pair up with roasted meats and mashed potatoes in a most excellent manner.
- 3 medium carrots, thinly sliced (about ¼") on the bias
- 1 ½ Tbls honey
- 1 Tbls olive oil
- 1 1/2 Tbls butter
- Kosher salt and cracked black pepper
Preheat oven to 350º
Toss carrots in a bowl with olive oil, and season well with salt and pepper. Pour carrots onto a sheet pan, spread out evenly, and bake in 350º oven for about 10 min.
Add butter to the pan and return to oven and bake for about 5 minutes. Remove pan and add honey, and toss the carrots until well coated. Return pan to oven and bake for another 10 to 15 minutes, stirring occasionally. Bake until carrots are soft and caramelized. Toss with a dash of fresh herbs, if you like. Serve immediately.
