There is nothing more rustic than raw ingredients, boosted by the salty-acidic combination of artisan parmesan and fresh lemon juice. Simple, delicious and sexy. Few ingredients, with a big payoff of flavors.
Time for something fresh!
- 1 bunch asparagus, trimmed of rough stems
- ¼ cup grated parmesan, plus long shaves for garnish
- 1 ½ Tbls fresh squeezed lemon juice (1 lemon)
- ¼ cup EV olive oil
Working with the asparagus one at a time, using a vegetable peeler, peel thin strips from the bottom of the stem up to the tip. Reserve the thin strips in a bowl, and in a separate bowl whisk the lemon juice and the grated parmesan together. Slowly drizzle in the olive oil and whisk into the lemon juice mixture. Season with salt and pepper to taste.
Dress the asparagus shavings with the dressing, and toss. Serve up the salad, garnished with more shavings of parmesan.
